Francisco Delapaz opened Dos Primos Restaurant in Hermann on New Year’s Day 2014. Hermann becomes the 12th Dos Primos location.
Delapaz, his brother and business partners have developed this fast-growing group of Mexican restaurants that numbers 21, with 12 of them under the name Dos Primos. One of his brothers recently opened a restaurant under that name in Louisiana, Mo.
Jose Zaragoza will manage the Hermann store, which is in the former Pizza Hut location along Highway 100 between Hermann Pharmacy and Village Market.
Delapaz started working in restaurants in Atlanta, Ga., as a dish washer in 1989, then moved to Tennessee where he worked for five years in restaurant kitchens. From there he moved to St. Louis and worked in kitchens at several restaurants.
Then in 1993 Delapaz opened his first restaurant in St. Charles, and gradually he and his three Mexican-American brothers opened other Dos Primos restaurants in Wentzville, St. Peters, O’Fallon and Lake St. Louis.
They also have restaurants in Troy and Bowling Green, and one of Delapaz’ brothers has restaurants in Montgomery City and Owensville.

“We also have restaurants in Iowa, and one in Minnesota,” said Delapaz, who lives in St. Charles but said he will spend a lot of time in Hermann.
Delapaz is proud of the colorful artwork painted on the walls of the Hermann restaurant, the work of “a talanted 80-year-old man,” he said.
Dos Primos will be open from 11-9 Sunday through Thursday, and from 11 a.m. to 10 p.m. Friday and Saturday.
On their full menu of Mexican food, they will serve margaritas, beer and local wines.
