Salmon Loaf

1 large can salmon

1tsp. salt

1/2 tsp. pepper

1/2 c. hot milk

1/4 tsp. paprika

2 tbsp. lemon juice

2 egg yolks

1/2 c. cracker crumbs

3 egg whites 

 

Mix together salmon from which the skin and bones have been removed and have been mashed fine, salt, pepper, paprika, lemon juice, beaten egg yolks, cracker crumbs and hot milk. Fold in egg whites which have been beaten stiff. Pour into well-buttered loaf pan, bake at 350 degrees for one hour. Serves 4 or 5.
